Fish Soup, Secrets and Health Benefits

by Aliaksandr

Cooking practice counts a lot of cooking techniques, but they are based on two different ways: wet and dry heat. We'll talk about cooking of fish soups.

The basis of many fish dishes is a bouillon. It is also used for preparation of some cold dishes, soups and sauces. How to start cooking bouillon? First of all with choice of a suitable fish for this purpose, you can use almost any fish, as well as some canned fish. Exceptions are fish flatfishes, marlin, swordfish, sea eel, conger eel, flounder, sailfish, bonito, saury, herring, sardines, mackerel, tuna, it is better to fry them.

The most suitable fishes for soup cooking are argentina, batterfish, eelpout, slabs, tooth, bluefish, grenadier, sea trout, sea bream, sea bass, haddock, whiting, a fish-captain, saury, umbrina, hake.

The bouillon extracts soluble substances from the muscle tissue of the fish. A large number of minerals goes into the broth. The process of boiling coagulates the protein, and it is standing on the surface as a foam, which is recommended to remove in order to avoid clouding of a bouillon. All extractives which are located in the soup interact and form new products with a specific taste, smell, color. This is why all fish soups are so tasty and healthy.

There are many recipes of fish soup, but there are some secrets that will help to improve any of them.

Sometimes there is a taste of fat in a soup. It happens when using fatty fish. Sauerkraut, pickles, lemons, vinegar, tomato puree, dried grape wine will help to reduce this taste.

Some fishes have specific tastes and odors (cod, haddock, pike, burbot). You can add more spices in a soup such as: bay leaf, black pepper and spicy greens - dill, parsley and celery, it will help you to mitigate specific tastes and odors.

How to give a golden color to the bouillon? Take an onion, cut crosswise into two pieces and fry it in a pan without using any fat. Then put the blurb in your soup and cook with a fish. For the same purpose you can also use a large chopped roasted carrot.

Daily consumption of the soup has a positive impact on your health. Only fresh and healthy ingredients must be used for soup preparation. Do not store soups for a long time, it is best to cook them more often and eat freshly prepared.

Italian Cooking - An Overview

by Stewart Alves

Italian cooking today is no longer restricted to Italy. It has become one of the most popular international cuisines. People of every continent today are familiar with the tastes of the pizza and the pasta. What accounts for this almost universal popularity? The freshness of the Italian ingredients, the light hand with which the spices and seasoning are applied, the vast regional variations and the judicious use of beverages have all contributed towards making Italian food unique.

A brief history

Italy as we know today was unified only in the nineteenth century. So the history of Italian food is longer than that of the country!

• The first mention of Italian cuisine is found in a poem by Archestratus in the fourth century BC. The ancient roman cuisine borrowed heavily from the Greeks and also from Sicily.

• The earliest traditional Italian cooking probably originated in Sicily. In the Medieval period, the influence of Greeks and Arabs were quite noticeable. In fact, the Arab traders introduced ingredients like almond and rice and probably even spaghetti. With the passage of time, other cultures left their influences on the Italian cooking. Quite a few detailed cookbooks made their appearances at this time, reflecting the gradually evolving elegance and complexity of Italian food preparation.

• The modern era of Italian cooking is marked by the compilation of Bartholomew Scappi's five volume book called Opera in 1570. The book contained a detailed description of the food and everything else required for preparing it in the correct Italian style. More books followed, emphasizing not only on Italian cooking but the correct ways of preparing, serving and eating it.

• Several modern cookbooks have appeared since the nineteenth century. The ease of preparing Italian cooking and its excellent taste has today made this cuisine a truly international one.

The accompaniments

Italian cooking needs to be complemented by the correct beverage in order to savor it to the fullest. Here are some of the beverages without which Italian cooking loses half its appeal.

• Coffee prepared in the true Italian style, is a joy in itself. Whether it is the classic espresso or the café macchiato topped with cream or the stronger ristretto, or the weaker cappuccino or café latte, it is a true complement to authentic Italian cooking.

• Being one of its largest producers in the world, wine is the most favored of all accompaniments to Italian meals. Vineyards in twenty regions of the country produce quality wine. It is not only an important element of the economy but also of the culture and cuisine.

• Apart from this, lemoncello and grappa are the traditional beverages of Italy. Vermouth, campari and martini are the most popular Italian aperitifs.

The reason of popularity

Why is Italian cooking so popular?

• Italian meals are prepared from fresh and seasonal ingredients. This adds flavor and lowers the price.
• Italian food is easy to cook.
• Little preparation is needed. No elaborate spices are used.
• The flavor is strong but not overpowering. It can appeal to both young and old.

That's why Italian cooking is enjoyed all over the world.

Healthy beans recipes

by rojer wilim

Beans are good for you health in many ways. One important thing they do is help build bones. Here is a little more info on that and a good bean recipe.

Beans recipe, as with other dark foods, contain minerals important for our blood, such as iron. Chromium is also said to be rich in dark foods. And we all know legumes have a good amount of protein in them. As a result of these factors, one can get most of the nutrients one needs to grow strong bones and teeth from beans (as well as some other dark beans). This is especially important for children, of course.

I imagine this is one reason why one of our Facebook fans recently suggested bean soup as a good mid-week dinner.

If you've just arrived home from an ice skating, or a cold soccer game, or simply walking home from a wet and cold night, there is nothing like a hot pot of beans to come home to. It is already getting cold again here in Poland, and we are thinking about cooking some bean soups again soon.

Garlic is a good way to fight of parasites and keep healthy, but garlic can be overused. And in cold places, there are few parasites, so the need to fight them off is less important. Luckily, there are other options to jazz up your bean soup if you have been using a little too much garlic.
Try some leeks or scallions or both. They are not as intense as garlic and a bit easier for the body to handle.Black beans recipes are so healthful.

Bean Soup

One good way to cook beans is to pressure cook them. However, if you do not have a pressure cooker, it is best to soak beans overnight and then, early in the morning, rinse and drain and prepare the beans to cook. You can also sprout them for a day after soaking them in order to break down the proteins for better assimilation. This is what I always do.
Ideally, it is wonderful to start any soup with fresh, spicy herbs of the season. Leeks, onions, or bright orange turmeric sautéed in some organic butter or oil are nice options. Adding in fresh herbs, if possible, at the beginning and later, at the very end of the cooking, adds some nice, fresh, green aromatics. Poblano peppers are also really good, as they add spice and flavor without the extreme heat of other peppers. I add some salt to the pot prior to cooking as well.

Pressure cook or cook in a revere ware pot or similar style pot to preserve integrity of the food and avoid unwanted leaching.

After cooking, serve in another dish with salt or Spike to taste and green garnishes, and perhaps with chopped peppers. Also, I add the oil after the food has cooled down a bit so as not to disturb the omegas too much.

Serve with a crisp green salad. Add walnuts and a squirt of lime on both the salad and the beans for a nice last touch.

For some other bean recipes, Rachel Fox wrote about bean quesadillas and bean breakfast burritos not long ago, and I've written about vegan bean burgers and beans with millet in the past. I actually like them plain and simple with just a bit of olive oil and salt from time to time as well. You can also grab some organic refried beans in a can for a quick meal if you don't have time to make something up.

What Is the Right Omega Three Dosage Amount?

by George Roy Montgomery

Nowadays many people including doctors, nutritionists and cardiologists are urging us to increase our fish intake because they contain very special and important fats known as omega 3 fatty acids, which are much needed by our body. These essential fatty acids can be obtained by eating fish directly or by taking pills that are made of fish oil. Now a question that arises is, "What is the right omega three dosage amount?" this is a very important question yet a lot of people don't bother to research and find out what their correct dosage should be.

Studies indicate that with a regular dosage of omega 3 rich fish oil supplements we can improve our children's IQ. Fish oil supplements can reduce the anxiety of our children and can improve their behavior. Research has also shown that children that have been given omega 3 fatty acids tend to score better on reading tests.

A lot of people think that as it is good, it does not really matter how much of it we take. They are wrong. Omega 3 is only good to a certain extent and over dosage may be harmful. So it is important that we are aware of how much we consume.

The right omega three dosage amount can help in the development of the nervous system and it can also assist in relieving some mental disorders like ADD, ADHD, Parkinson's and Alzheimer's.
In addition to this, one of the biggest advantages of ingesting omega 3 fatty acids is that they raise the immune system of the body which can prevent us from suffering from minor but nevertheless unwanted sicknesses like colds and flu. Omega 3 fatty acids also help in preventing and alleviating major diseases like cancer, kidney disease, high blood pressure, obesity and heart attacks.

Many of you may be ignorant of the need for omega 3 fatty acids by our body. Notwithstanding the myriad of advantages they offer it has been reported that 90 percent of the world's population is deficient in these fats. And that between 63,000 and 97,000 lives could be saved annually with a daily intake of omega 3 rich oil.

So what exactly is the correct omega three dosage amount?

The minimum intake of omega 3 fish oil supplements that doctors recommend is 1g and the maximum is 5g daily. Usually a fish oil capsule weighs about 500mg.
Given this information on how much and why you should be taking an omega three dosage amount to suit your bodies requirements, it is my hope that you will investigate a quality Omega 3 DHA Fish Oil manufactured to the highest of standards which can make you feel younger, fitter and altogether more healthy!

Paleo Diet Food Lists: Kick Start Your Meal Planning

by Tom Parker

The principle of the Paleo diet is to strictly follow the eating habits of our prehistoric ancestors, cavemen. Cavemen were hunters and gatherers, eating lean meats, fresh fruits and vegetables, and were believed to be healthier than we are today. By closely following the guidelines and food lists laid out in the Paleo diet, you can make significant improvements to your health and well being.

As the era of the caveman was prior to the age of agriculture, they did not eat wheat or grains. These kinds of foods therefore fall into the 'do not eat' Paleo food lists, and this includes grains which are designated gluten free. Other grains on the list include corn, oats, rice, barley and rye. Of course, any foods which are made from these ingredients must also be avoided, including bread, cakes, corn chips, muffins, pasta, rice flour, tortillas and rye crackers.

We also know that cavemen did not eat processed or packaged foods so you'll need to avoid these altogether. Remember that certain meats feature on the 'do not eat' lists too because they aren't lean. These include breakfast sausage, salami, chicken wings, bacon, and fatty lamb chops.
While there are many foods that cannot be eaten, there are many more that can be eaten. People have found there are a wide variety of interesting meals that can be made once you're familiar with the Paleo food lists, so you can expect to enjoy your food at the same time as improving your health. For example, while cavemen did not eat dairy, they did eat eggs. Why not whip up an omelette with fresh vegetables like onions, peppers, tomatoes and mushrooms?

Snacking on fresh vegetables is another way to enjoy food on the Paleo diet; try them dipped in guacamole as a treat! One thing to remember is that sauces and condiments should be kept to minimum when enjoying vegetables as a snack or side dish as this is the healthiest option and contains the fewest calories.

Lean meats can also be enjoyed; these are firmly on the 'can be eaten' Paleo food lists. Always look for organic, pasture-fed animal meats, but if these are not available, go for the leanest cuts of meat you can find.
One of the highlights of the Paleo diet is that you will feel fuller for longer as your digestive system slows. To take advantage of this, only eat when you're hungry and keep snacking to a minimum. Alternatively, if you find that you're eating too often or very infrequently, try eating small, balanced meals at regular intervals (ideally every 3 hours) which will help to boost your metabolism, reduce your appetite and calm your digiestive system.
